For the Pizza
  • 2 loaves pizza dough 1 pound each, fresh or frozen, thawed
  • 3 tablespoons olive oil divided
  • 1 can whole tomatoes 28 ounces, drained and crushed
  • 1 medium onion finely chopped
  • 1 can anchovy fillets 2 ounces, drained and broken into 1/4-inch pieces
  • 1 cup mozzarella cheese shredded
  • 1/2 cup soft bread crumbs
  • Fresh torn basil leaves

Method
 

  1. Preheat your oven to 425°F (220°C). Grease a 15x10x1-inch baking pan.
  2. Press the pizza dough to fit the bottom and 1/2 inch up the sides of the pan. Brush the dough with 2 tablespoons of olive oil.
  3. Top the dough with the crushed tomatoes, chopped onion, and anchovy pieces.
  4. Sprinkle the shredded mozzarella cheese evenly over the toppings.
  5. In a small bowl, combine the bread crumbs with the remaining 1 tablespoon of olive oil. Sprinkle this mixture over the cheese.
  6. Bake on a lower oven rack for 20-25 minutes, or until the edges are golden brown and the cheese is melted and bubbly.
  7. Sprinkle fresh basil leaves over the pizza just before serving.
