Ingredients
  

Salad
  • 6 cups watermelon cubed
  • 1 cup feta cheese crumbled
  • 1/2 cup fresh mint leaves chopped
  • 1/4 cup red onion thinly sliced
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Combine the cubed watermelon, crumbled feta cheese, chopped mint leaves, and sliced red onion in a large bowl.
  2. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper for the dressing.
  3. Pour the dressing over the watermelon mixture and toss gently to combine.
  4. Cover the bowl and chill in the refrigerator for at least 15 minutes before serving.

Notes

This salad is best served cold. You can add other ingredients like cucumber or avocado if desired.
