Method
- Combine the cubed watermelon, coconut milk, lime juice, and optional sweetener in a blender. Blend until smooth.
- Pour the mixture into popsicle molds, leaving a small space at the top for expansion.
- Insert popsicle sticks and freeze for at least 4 hours, or until solid.
- To unmold, run the popsicle molds under warm water for a few seconds.
Notes
You can add small pieces of watermelon or lime zest to the molds before freezing for added texture and flavor.
