Watermelon Coconut Lime Popsicles

Ingredients
  

For the Popsicles
  • 4 cups seedless watermelon cubed
  • 1/2 cup full-fat coconut milk from a can
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon honey or maple syrup optional, adjust to taste

Equipment

  • Blender
  • Popsicle molds

Method
 

  1. Combine the cubed watermelon, coconut milk, lime juice, and optional sweetener in a blender. Blend until smooth.
  2. Pour the mixture into popsicle molds, leaving a small space at the top for expansion.
  3. Insert popsicle sticks and freeze for at least 4 hours, or until solid.
  4. To unmold, run the popsicle molds under warm water for a few seconds.

Notes

You can add small pieces of watermelon or lime zest to the molds before freezing for added texture and flavor.
