- Make the chia pudding: In a bowl, whisk together the chia seeds, almond milk, and maple syrup. Let it sit for 5 minutes, then whisk again to break up any clumps. Cover and refrigerate for at least 2 hours, or until thickened.
- Prepare the watermelon: In a blender, puree the cubed watermelon until smooth. You should have about 1.5 cups of watermelon puree.
- Assemble the parfaits: Spoon a layer of chia pudding into the bottom of each serving glass. Top with a layer of watermelon puree. Add another layer of chia pudding, followed by a layer of mixed berries and sliced strawberries.
- Serve immediately or chill for later.
Notes
You can customize the fruit layers with any of your favorite fruits. For a sweeter parfait, add more maple syrup to the chia pudding.
