Watermelon Chia Parfait

Ingredients
  

For the Chia Pudding
  • 1/2 cup chia seeds
  • 2 cups almond milk or other milk of choice
  • 2 tablespoons maple syrup or to taste
For the Watermelon Layer
  • 2 cups cubed watermelon seedless
For the Fruit Topping
  • 1 cup mixed berries fresh or frozen
  • 1/2 cup sliced strawberries

  • Small bowls
  • Serving glasses

Method
 

  1. Make the chia pudding: In a bowl, whisk together the chia seeds, almond milk, and maple syrup. Let it sit for 5 minutes, then whisk again to break up any clumps. Cover and refrigerate for at least 2 hours, or until thickened.
  2. Prepare the watermelon: In a blender, puree the cubed watermelon until smooth. You should have about 1.5 cups of watermelon puree.
  3. Assemble the parfaits: Spoon a layer of chia pudding into the bottom of each serving glass. Top with a layer of watermelon puree. Add another layer of chia pudding, followed by a layer of mixed berries and sliced strawberries.
  4. Serve immediately or chill for later.

Notes

You can customize the fruit layers with any of your favorite fruits. For a sweeter parfait, add more maple syrup to the chia pudding.
