Ingredients
  

For the Base
  • 1 large Watermelon seedless, about 10-12 inches in diameter
For the Topping
  • 8 oz Cream cheese softened
  • 1/4 cup Powdered sugar
  • 1 tsp Vanilla extract
  • 1 cup Mixed berries such as blueberries, raspberries, sliced strawberries
  • 1/4 cup Kiwi slices
  • 1/4 cup Mandarin orange segments

Method
 

  1. Cut the watermelon into a round, pizza-like shape. Aim for about 1-inch thickness. You can trim the rind off.
  2. Place the watermelon round on a large serving platter.
  3. In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  4. Spread the cream cheese mixture evenly over the watermelon base, like frosting on a cake.
  5. Arrange the mixed berries, kiwi slices, and mandarin orange segments decoratively over the cream cheese layer.
  6. Chill the fruit pizza in the refrigerator for at least 15 minutes before serving. This helps the toppings set.
  7. Slice and serve immediately.

Notes

Feel free to use any of your favorite fruits for the topping. Ensure the watermelon is well-drained before adding the cream cheese to prevent a watery base.
