For the Sandwich
  • 8 slices sourdough bread
  • 6 tablespoons butter, softened divided
  • 3 tablespoons mayonnaise
  • 3 tablespoons manchego cheese finely shredded
  • 1/8 teaspoon onion powder
  • 4 ounces brie cheese rind removed
  • 1/2 cup sharp white cheddar cheese shredded
  • 1/2 cup Monterey jack cheese shredded
  • 1/2 cup gruyere cheese shredded

Method
 

  1. In a small bowl, combine the shredded manchego cheese, onion powder, brie cheese, cheddar cheese, Monterey jack cheese, and gruyere cheese. Mix well.
  2. Spread 1 tablespoon of softened butter on one side of each slice of bread.
  3. Spread mayonnaise on the unbuttered side of two slices of bread.
  4. Divide the cheese mixture evenly between the two slices of bread with mayonnaise, creating your filling.
  5. Top with the remaining two slices of bread, buttered side up.
  6. Heat a non-stick frying pan over medium heat. Place the sandwiches in the pan.
  7. Cook for 4-5 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  8. Remove from the pan, let cool slightly, and serve.
