Method
- Toast the english muffin halves.
- Heat olive oil or butter in a skillet over medium heat. Crack the eggs into the skillet. Cook until set, then season with salt and pepper.
- Place the ham slices on top of the cooked eggs. Sprinkle the shredded cheese and chopped chives over the ham. Cover the skillet for about 1 minute, or until the cheese is melted.
- Assemble the sandwich by placing the egg, ham, and cheese mixture onto one half of the toasted english muffin, then topping with the other half.
Notes
To make two sandwiches at once, toast the English muffins in a toaster and sauté two sets of eggs in the pan simultaneously.
