- Preheat your oven to 350 degrees F (175 degrees C). Lightly spray a 9x13-inch baking dish with cooking spray.
- Heat a large skillet over medium-high heat. Add the ground beef and cook, stirring occasionally, until it's almost browned and crumbly, about 5 minutes. Add the diced onion and continue to cook and stir until the beef is fully browned and the onion is softened, about 5 more minutes.
- Stir the water and taco seasoning mix into the beef and onion mixture. Bring to a simmer and cook until the water has evaporated, about 5 minutes.
- Arrange the flour tortillas in the prepared baking dish. Spread half of the ground beef mixture over the tortillas. Spoon half of the corn over the beef layer, then sprinkle with 1/3 of the Cheddar cheese. Crush the tortilla chips over the cheese layer.
- Repeat the layers with the remaining ingredients: the rest of the ground beef mixture, the rest of the corn, another 1/3 of the Cheddar cheese, and the remaining tortilla chips. Finish by topping with the remaining Cheddar cheese, diced tomatoes, and chopped olives.
- Bake in the preheated oven for 15 to 20 minutes, or until the casserole is heated through and the cheese is melted.

Notes
To make this ahead, prepare the casserole up to the point of baking. Cover it tightly and refrigerate for up to 2 days. When ready to bake, remove from the refrigerator about 30 minutes before baking, or add an extra 5-10 minutes to the baking time.
