Ingredients
  

Salad
  • 3 cups cucumber peeled, seeded, and chopped
  • 2 cups cherry tomatoes halved
  • 1 cup red onion thinly sliced
  • 1/2 cup kalamata olives pitted and halved
  • 4 ounces feta cheese crumbled
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Combine the chopped cucumber, halved cherry tomatoes, sliced red onion, and halved Kalamata olives in a large bowl.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper for the dressing.
  3. Pour the dressing over the salad ingredients and toss gently to combine.
  4. Gently fold in the crumbled feta cheese and chopped fresh parsley.
  5. Serve immediately or chill for later.

Notes

For best results, prepare the salad just before serving to maintain the crispness of the vegetables.
