Stuffed Spinach Chicken

A simple recipe for stuffed chicken breast with spinach and cheese.

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6 oz each
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Filling
  • 5 ounces fresh spinach wilted and squeezed dry
  • 4 ounces cream cheese softened
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic minced

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Prepare the chicken breasts. Place each chicken breast on a cutting board. Carefully slice a pocket into the thickest side of each breast, being careful not to cut all the way through.
  3. Make the filling. In a medium bowl, combine the wilted spinach, softened cream cheese, Parmesan cheese, and minced garlic. Mix until well combined.
  4. Stuff the chicken. Spoon the spinach mixture evenly into the pockets of each chicken breast. Secure the opening with toothpicks if needed.
  5. Season the chicken. Rub the outside of each stuffed chicken breast with olive oil. Season with salt and pepper.
  6. Cook the chicken. Place the stuffed chicken breasts in the prepared baking dish. Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  7. Rest and serve. Let the chicken rest for 10 minutes before slicing and serving.

Notes

You can add other cheeses like mozzarella or Swiss to the filling. Serve with your favorite side dishes.
