Ingredients
  

For the Spicy Sauce
  • 1 tablespoon water
  • 1 tablespoon rice vinegar
  • 1 tablespoon white sugar
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon minced garlic
For the Sandwich
  • 1 tablespoon butter, softened
  • 2 slices bread
  • 2 tablespoons cream cheese, softened
  • 2 slices Cheddar cheese
  • 4 slices pickles or as desired
  • 4 slices tomato

Method
 

  1. In a small saucepan, combine water, vinegar, sugar, red pepper flakes, and garlic. Cook over medium heat, stirring, until the sugar dissolves and the sauce slightly reduces, about 5 minutes.
  2. Heat a skillet over low heat.
  3. Spread butter on one side of each slice of bread. On the opposite side of one bread slice, spread the cream cheese. Layer the Cheddar cheese and pickles on top of the cream cheese. Drizzle 1 to 2 tablespoons of the prepared sauce on the other slice of bread, on the side opposite the butter. Place this bread slice on top of the pickle layer, with the butter-side facing out, to form the sandwich.
  4. Cook the sandwich in the hot skillet until the cheese is melted and the bread is golden brown, about 5 minutes per side. Remove the top piece of bread, add the tomatoes to the middle, and close the sandwich.
