Slow Cooker White Chicken Chili

Ingredients
  

Chili
  • 2 lbs boneless, skinless chicken breasts
  • 2 cans cannellini beans rinsed and drained
  • 1 can diced green chiles undrained
  • 1 can chicken broth
  • 1 cup salsa verde
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper optional
Toppings
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup sour cream

Method
 

  1. Place chicken breasts in the slow cooker.
  2. Add cannellini beans, diced green chiles, chicken broth, salsa verde, cumin, chili powder, oregano, and cayenne pepper (if using) to the slow cooker.
  3. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through.
  4. Remove chicken from the slow cooker and shred it with two forks. Return shredded chicken to the slow cooker.
  5. Stir to combine and let simmer for an additional 60 minutes.
  6. Serve hot, topped with shredded Monterey Jack cheese, chopped cilantro, and sour cream.

Notes

You can substitute chicken thighs for chicken breasts if desired.
