Ingredients
  

For the Cake
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 0.5 cup unsalted butter softened
  • 2 large eggs
  • 0.5 cup milk
  • 1 tsp vanilla extract
For the Peaches
  • 3 large peaches peeled, pitted, and sliced
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon

Method
 

  1. Preheat your oven to 375°F (190°C). Butter the cast-iron skillet.
  2. In a large bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt.
  3. Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together the eggs, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  6. Spread the batter evenly in the prepared skillet.
  7. Arrange the sliced peaches over the batter. In a small bowl, combine 2 tablespoons of sugar and cinnamon, then sprinkle over the peaches.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  9. Let the cake cool slightly in the skillet before serving.

Notes

Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
