- Heat olive oil in a large skillet over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Remove the sausage from the skillet and set aside, leaving the drippings in the pan.
- Add the sliced bell peppers and onion to the skillet. Cook, stirring occasionally, until they begin to soften, about 5-7 minutes.
- Add the minced garlic and dried oregano to the skillet. Cook for 1 minute more until fragrant.
- Return the cooked sausage to the skillet. Stir everything together and season with salt and black pepper to taste.
- Reduce the heat to low, cover the skillet, and let it simmer for about 15-20 minutes, or until the peppers and onions are tender and the flavors have melded.
- Serve hot, on its own, or with crusty bread, cooked pasta, or rice.
Notes
You can adjust the spice level by using hot Italian sausage or adding a pinch of red pepper flakes. This dish is also delicious served over polenta.
