Rich Slow Cooker Beef Stew

Ingredients
  

For the Stew
  • 2 pounds beef chuck roast cut into 1-inch cubes
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1/2 cup red wine optional
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
For the Vegetables
  • 1 pound potatoes peeled and cut into 1-inch chunks
  • 3 large carrots peeled and cut into 1-inch pieces
  • 2 stalks celery cut into 1-inch pieces
For Thickening
  • 1/4 cup all-purpose flour
  • 1/4 cup cold water

Method
 

  1. Place the beef, onion, and garlic in your slow cooker.
  2. In a bowl, whisk together the beef broth, red wine (if using), tomato paste, thyme, rosemary, salt, and pepper. Pour this mixture over the beef in the slow cooker.
  3. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  4. Add the potatoes, carrots, and celery to the slow cooker. Stir to combine.
  5. Continue to cook on low for another 2-3 hours, or until the vegetables are tender.
  6. In a small bowl, whisk together the flour and cold water until smooth. Stir this mixture into the stew to thicken it.
  7. Cook for an additional 15-20 minutes, or until the stew has thickened.
  8. Let the stew rest for 1 hour before serving.

Notes

Serve hot with crusty bread.
