Rich and Hearty Shepherd's Pie

A classic comfort food, this Shepherd's Pie features a rich ground beef filling topped with creamy mashed potatoes.

Ingredients
  

For the Filling
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 can beef broth (10.5 oz)
  • 2 tablespoons tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
For the Topping
  • 2 pounds potatoes, peeled and quartered
  • 1/4 cup milk
  • 2 tablespoons butter

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and mash with milk and butter. Season with salt and pepper.
  3. While potatoes are boiling, heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess fat.
  4. Add chopped onion to the skillet and cook until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Stir in frozen peas, frozen corn, beef broth, tomato paste, Worcestershire sauce, and thyme. Bring to a simmer and cook for 5-10 minutes, or until the sauce has thickened slightly.
  6. Season the meat mixture with salt and pepper to taste.
  7. Pour the meat mixture into a baking dish.
  8. Spread the mashed potatoes evenly over the meat mixture.
  9. Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
  10. Let stand for a few minutes before serving.

Notes

For an extra rich topping, you can add shredded cheddar cheese to the mashed potatoes.
