Red, White, and Blue Icebox Cake

Ingredients
  

For the Cake
  • 1 package Graham crackers about 20-24 crackers
For the Cream
  • 2 cups Heavy cream cold
  • 1 cup Powdered sugar
  • 1 teaspoon Vanilla extract
For the Topping
  • 1 cup Strawberries sliced
  • 1 cup Blueberries

Equipment

  • 9x13-inch baking dish
  • Electric mixer
  • Spatula

Method
 

  1. Line the bottom of a 9x13 inch baking dish with graham crackers, breaking them to fit if necessary.
  2. In a large bowl, beat the heavy cream with an electric mixer until soft peaks form.
  3. Gradually add the powdered sugar and vanilla extract, and continue beating until stiff peaks form.
  4. Spread half of the whipped cream mixture evenly over the graham crackers.
  5. Arrange half of the sliced strawberries and blueberries over the whipped cream.
  6. Add another layer of graham crackers.
  7. Spread the remaining whipped cream mixture over the second layer of graham crackers.
  8. Top with the remaining strawberries and blueberries.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the crackers to soften.
  10. Slice and serve cold.

Notes

You can use other berries like raspberries or blackberries. For a richer flavor, you can add a tablespoon of lemon zest to the whipped cream.
