Method
- Line the bottom of a 9x13 inch baking dish with graham crackers, breaking them to fit if necessary.
- In a large bowl, beat the heavy cream with an electric mixer until soft peaks form.
- Gradually add the powdered sugar and vanilla extract, and continue beating until stiff peaks form.
- Spread half of the whipped cream mixture evenly over the graham crackers.
- Arrange half of the sliced strawberries and blueberries over the whipped cream.
- Add another layer of graham crackers.
- Spread the remaining whipped cream mixture over the second layer of graham crackers.
- Top with the remaining strawberries and blueberries.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the crackers to soften.
- Slice and serve cold.
Notes
You can use other berries like raspberries or blackberries. For a richer flavor, you can add a tablespoon of lemon zest to the whipped cream.
