- Place bread on a work surface and spread mayonnaise evenly on one side of each bread slice.
- Combine cheese and pickles in a bowl until evenly mixed. Divide the cheese mixture evenly among 4 bread slices. Place the remaining 4 bread slices, mayonnaise side down, on top of the cheese and pickle mixture.
- Spread half of the softened butter evenly over the tops of the sandwiches. Heat a large skillet over medium heat.
- Place sandwiches, buttered side down, in the skillet. Spread the remaining butter evenly over the tops of the sandwiches. Cook until golden brown and toasted on the bottom side, about 4 minutes. Flip and cook until the cheese is melted through and the bread is toasted on both sides, about 4 minutes more.
- Serve immediately.
