Method
- Cook fettuccine pasta according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, season chicken pieces with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Do not burn the garlic.
- Pour in heavy cream and bring to a gentle simmer. Stir in grated Parmesan cheese, black pepper, and salt to taste. Cook, stirring, until the sauce thickens slightly, about 3-5 minutes.
- Return the cooked chicken to the skillet with the sauce. Add the drained fettuccine pasta. Toss to coat everything evenly. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Serve immediately.
Notes
For extra heat, you can add a pinch of cayenne pepper to the sauce. Garnish with fresh parsley if desired.
