Method
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a small bowl, toss the sliced peaches with melted butter and brown sugar. Arrange the peaches in a single layer on one side of the prepared baking sheet.
- Place the wheel of brie in the center of the baking sheet. Bake for 15-20 minutes, or until the brie is softened and the peaches are tender.
- While the brie and peaches are baking, toast the pecans. In a small dry saucepan over medium heat, toast the chopped pecans for 3-5 minutes, stirring frequently, until fragrant. Remove from heat and stir in the honey.
- Remove the baking sheet from the oven. Spoon the honeyed pecans over the warm brie.
- Serve immediately with sliced baguette for dipping.
Notes
You can substitute other stone fruits like nectarines or plums for the peaches. For a spicier kick, add a pinch of cinnamon to the peaches.
