Ingredients

For the Peaches
  • 2 large peaches ripe, pitted and sliced
  • 1 tablespoon butter melted
  • 1 tablespoon brown sugar
For the Brie
  • 1 wheel brie cheese about 8 ounces
For the Pecans
  • 1/2 cup pecans chopped
  • 1 teaspoon honey
For Serving
  • 1 bag baguette sliced

Equipment

  • Baking sheet
  • Small saucepan

Method

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small bowl, toss the sliced peaches with melted butter and brown sugar. Arrange the peaches in a single layer on one side of the prepared baking sheet.
  3. Place the wheel of brie in the center of the baking sheet. Bake for 15-20 minutes, or until the brie is softened and the peaches are tender.
  4. While the brie and peaches are baking, toast the pecans. In a small dry saucepan over medium heat, toast the chopped pecans for 3-5 minutes, stirring frequently, until fragrant. Remove from heat and stir in the honey.
  5. Remove the baking sheet from the oven. Spoon the honeyed pecans over the warm brie.
  6. Serve immediately with sliced baguette for dipping.

Notes

You can substitute other stone fruits like nectarines or plums for the peaches. For a spicier kick, add a pinch of cinnamon to the peaches.
