Peach Muffins with Vanilla Glaze

Method
 

  1. Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate medium bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the chopped peaches.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for 5-10 minutes before transferring them to a wire rack to cool completely.
  9. While the muffins cool, prepare the glaze. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
  10. Drizzle the glaze over the cooled muffins.

Notes

You can use canned or frozen peaches if fresh are not available. Thaw and drain them well before using.
