Peach Crumble Bars with Buttery Oat Topping

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking pan.
  2. In a large bowl, combine the flour, rolled oats, 1 cup of granulated sugar, and salt for the crust and topping. Pour in the melted butter and mix until the mixture is crumbly.
  3. Press about two-thirds of the crumble mixture evenly into the bottom of the prepared baking pan to form the crust.
  4. In a separate bowl, gently toss the sliced peaches with 0.25 cup of granulated sugar, cornstarch, lemon juice, and cinnamon until the peaches are evenly coated.
  5. Spread the peach filling evenly over the crust in the baking pan.
  6. Sprinkle the remaining crumble mixture evenly over the peach filling.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the peach filling is bubbly.
  8. Let the bars cool completely in the pan before cutting into 12 bars.

Notes

You can use frozen peaches if fresh are not available. Thaw them completely and drain any excess liquid before using. For a richer flavor, you can add a pinch of nutmeg to the crumble topping.
