Peach Brown Sugar Cobbler

Ingredients
  

For the Filling
  • 6 cups fresh peaches peeled, pitted, and sliced
  • 1/2 cup brown sugar packed
  • 2 tablespoons all-purpose flour
  • 1 teaspoon lemon juice
For the Topping
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter cold and cut into cubes
  • 1/2 cup milk

Method
 

  1. Preheat your oven to 375°F (190°C). Butter a 9x13 inch baking dish.
  2. In a large bowl, combine the sliced peaches, brown sugar, 2 tablespoons of flour, and lemon juice. Toss gently to coat the peaches evenly.
  3. Pour the peach mixture into the prepared baking dish and spread it out evenly.
  4. In a separate medium bowl, whisk together 1 cup of flour, granulated sugar, baking powder, and salt.
  5. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  6. Pour in the milk and stir just until combined. Do not overmix.
  7. Drop spoonfuls of the topping mixture over the peaches in the baking dish.
  8. Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
  9. Let the cobbler cool for at least 10-15 minutes before serving. Serve warm, optionally with vanilla ice cream.

Notes

You can use frozen peaches if fresh are not available, but do not thaw them completely before using. Adjust baking time as needed.
