One Pot Taco Pasta

A simple and flavorful one-pot taco pasta recipe perfect for busy weeknights.

Ingredients
  

For the Pasta
  • 1 pound ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon taco seasoning
  • 1 can diced tomatoes 14.5 ounce, undrained
  • 4 cups beef broth
  • 12 ounces pasta such as rotini or penne
  • 1 cup shredded cheddar cheese

  • jalapenos sliced

  • Large pot or Dutch oven
  • Wooden spoon

Method
 

  1. In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes. Stir in the minced garlic and taco seasoning, and cook for 1 minute more until fragrant.
  3. Pour in the diced tomatoes (with their juice) and beef broth. Bring the mixture to a boil.
  4. Add the pasta to the boiling liquid. Reduce the heat to medium-low, cover, and simmer for 12-15 minutes, or until the pasta is al dente, stirring occasionally to prevent sticking.
  5. Stir in the shredded cheddar cheese until melted and combined. Serve hot with your favorite toppings.

Notes

You can adjust the amount of taco seasoning to your preference. For a spicier dish, add a pinch of cayenne pepper or some diced green chilies with the tomatoes.
