One Pan Lemon Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Lemon Sauce
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic minced
  • 1 tbsp honey
For Garnish
  • 1 lemon sliced
  • 2 tbsp fresh parsley chopped

  • Large oven-safe skillet

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix together olive oil, oregano, garlic powder, salt, and pepper.
  3. Rub the spice mixture all over the chicken thighs.
  4. Place the seasoned chicken thighs in the oven-safe skillet.
  5. In another small bowl, whisk together chicken broth, lemon juice, minced garlic, and honey.
  6. Pour the lemon sauce over the chicken in the skillet.
  7. Arrange the lemon slices around the chicken.
  8. Bake for 25-30 minutes, or until the chicken is cooked through and the sauce has thickened.
  9. Garnish with fresh parsley before serving.
