Method
- Cook the pasta according to package directions. Drain and rinse with cold water. Set aside.
- In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, Kalamata olives, red onion, parsley, and feta cheese.
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper for the dressing.
- Pour the dressing over the pasta salad and toss to combine. Taste and adjust seasoning if needed.
- To assemble the jars, layer the ingredients in the following order from bottom to top: dressing, cherry tomatoes, cucumber, red onion, olives, pasta, feta cheese, and parsley.
- Seal the jars tightly and refrigerate until ready to serve. Shake well before eating.
Notes
You can add grilled chicken or chickpeas for extra protein. Other vegetables like bell peppers or artichoke hearts also work well.
