Mediterranean Pasta Salad Jars

Ingredients
  

For the Salad
  • 8 ounces Rotini pasta or other short pasta shape
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber diced
  • 1/2 cup Kalamata olives pitted and halved
  • 1/2 cup Red onion thinly sliced
  • 1/4 cup Fresh parsley chopped
  • 1/4 cup Feta cheese crumbled
For the Dressing
  • 1/4 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Garlic powder

Equipment

  • Large pot
  • Colander
  • Large bowl
  • Mason jars

Method
 

  1. Cook the pasta according to package directions. Drain and rinse with cold water. Set aside.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, Kalamata olives, red onion, parsley, and feta cheese.
  3. In a small bowl or jar, whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper for the dressing.
  4. Pour the dressing over the pasta salad and toss to combine. Taste and adjust seasoning if needed.
  5. To assemble the jars, layer the ingredients in the following order from bottom to top: dressing, cherry tomatoes, cucumber, red onion, olives, pasta, feta cheese, and parsley.
  6. Seal the jars tightly and refrigerate until ready to serve. Shake well before eating.

Notes

You can add grilled chicken or chickpeas for extra protein. Other vegetables like bell peppers or artichoke hearts also work well.
