Lemon Herb Grilled Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6 oz each
For the Marinade
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic minced
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. In a small bowl, whisk together olive oil, lemon juice, minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
  2. Place the chicken breasts in a resealable bag or shallow dish. Pour the marinade over the chicken, ensuring it is evenly coated. Marinate for at least 15 minutes at room temperature, or up to 2 hours in the refrigerator.
  3. Preheat your grill to medium-high heat.
  4. Remove chicken from marinade and discard the marinade. Grill chicken for 5-6 minutes per side, or until the internal temperature reaches 165°F (74°C) and juices run clear.
  5. Let the chicken rest for 5 minutes before slicing and serving.

Notes

Serve with your favorite side dishes such as a fresh salad, roasted vegetables, or rice.
