Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6 oz each
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Topping
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup panko breadcrumbs
  • 2 tablespoons chopped fresh parsley optional

Method
 

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pat the chicken breasts dry with paper towels. Place them in the prepared baking dish.
  3. In a small bowl, whisk together the olive oil, garlic powder, salt, and pepper. Pour this mixture over the chicken breasts, ensuring they are evenly coated.
  4. In the same small bowl (no need to wash), combine the grated Parmesan cheese, panko breadcrumbs, and parsley (if using). Sprinkle this mixture evenly over the top of each chicken breast.
  5. Bake for 20-25 minutes, or until the chicken is cooked through and the topping is golden brown and crispy. The internal temperature should reach 165°F (74°C).
  6. Let the chicken rest for a few minutes before serving.
