Honey Garlic Salmon and Broccoli

Ingredients
  

For the Salmon and Broccoli
  • 1.5 lb Salmon fillets skin on or off
  • 1 lb Broccoli florets about 4 cups
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
For the Honey Garlic Sauce
  • 1/4 cup Honey
  • 1/4 cup Soy sauce low sodium recommended
  • 2 cloves Garlic minced
  • 1 tbsp Sesame oil
  • 1 tsp Cornstarch mixed with 1 tbsp water to form a slurry

Method
 

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a small bowl, whisk together the honey, soy sauce, minced garlic, and sesame oil. Set aside.
  3. Place the broccoli florets on one side of the prepared baking sheet. Drizzle with 1 tablespoon of olive oil, salt, and pepper. Toss to coat.
  4. Pat the salmon fillets dry with paper towels. Place them on the other side of the baking sheet. Drizzle with the remaining 1 tablespoon of olive oil, salt, and pepper.
  5. Roast the broccoli and salmon for 10 minutes.
  6. Remove the baking sheet from the oven. Pour the honey garlic sauce over the salmon fillets. Spoon any excess sauce over the broccoli.
  7. Return the baking sheet to the oven and bake for another 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork, and the broccoli is tender-crisp.
  8. If the sauce is too thin, you can return the baking sheet to the oven for a few more minutes to let it thicken, or stir in the cornstarch slurry and bake for 1-2 minutes until thickened.
  9. Serve the honey garlic salmon and broccoli immediately.

Notes

For a spicier kick, add a pinch of red pepper flakes to the sauce. You can also add other vegetables like bell peppers or asparagus to the baking sheet along with the broccoli.
