Healthy Cookie Dough Bark

Ingredients
  

For the Bark
  • 1 1/2 cup almond flour
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cup chocolate chips, divided

  • Baking sheet
  • Parchment paper
  • Microwave

Method
 

  1. In a large bowl, mix together almond flour, coconut oil, maple syrup, and vanilla extract until smooth.
  2. Fold in half of the chocolate chips.
  3. Line a baking sheet with parchment paper. Spread the cookie dough mixture onto the parchment paper to form the bark.
  4. Place the baking sheet in the freezer for 5 to 10 minutes.
  5. While the bark is chilling, melt the remaining chocolate chips in the microwave.
  6. Pour the melted chocolate evenly over the cookie dough bark. Return the baking sheet to the freezer for at least 1 hour, or until the chocolate is firm.
  7. Remove the bark from the freezer, cut it into pieces, and enjoy.

Notes

Store any leftover bark in the freezer for up to 2 months. You may want to let it thaw for a few minutes before eating.
