- In a large bowl, mix together almond flour, coconut oil, maple syrup, and vanilla extract until smooth.
- Fold in half of the chocolate chips.
- Line a baking sheet with parchment paper. Spread the cookie dough mixture onto the parchment paper to form the bark.
- Place the baking sheet in the freezer for 5 to 10 minutes.
- While the bark is chilling, melt the remaining chocolate chips in the microwave.
- Pour the melted chocolate evenly over the cookie dough bark. Return the baking sheet to the freezer for at least 1 hour, or until the chocolate is firm.
- Remove the bark from the freezer, cut it into pieces, and enjoy.
Notes
Store any leftover bark in the freezer for up to 2 months. You may want to let it thaw for a few minutes before eating.
