- Preheat your oven to 400°F (200°C). Toss the cubed potatoes with olive oil, salt, and pepper on a baking sheet. Spread them in a single layer.
- Roast the potatoes for 25-30 minutes, flipping halfway through, until they are tender and crispy.
- While the potatoes roast, cook the ground beef in a large skillet over medium-high heat. Break it apart with a spoon until browned. Drain off any excess grease.
- Add the chopped onion to the skillet with the beef and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- In a small bowl, whisk together the ketchup, brown sugar, Worcestershire sauce, Dijon mustard, chili powder, salt, and pepper.
- Pour the sauce mixture into the skillet with the beef and onions. Stir to combine and simmer for 5-10 minutes, allowing the sauce to thicken.
- To serve, divide the crispy potatoes among four bowls. Top with the sloppy joe beef mixture.

You can add other vegetables like bell peppers or corn to the sloppy joe mixture for extra flavor and nutrients. Serve with your favorite toppings like shredded cheese or a dollop of sour cream.
