Grilled Watermelon Skewers with Halloumi Cheese

Ingredients
  

For the Skewers
  • 1/2 medium Watermelon cut into 1-inch cubes
  • 8 oz Halloumi cheese cut into 1-inch cubes
  • 1/4 cup Fresh mint leaves chopped
  • 2 tbsp Olive oil
  • 1 tbsp Balsamic glaze for drizzling
  • 1/4 tsp Black pepper freshly ground

Equipment

Method
 

  1. Preheat your grill to medium-high heat.
  2. Thread the watermelon cubes and halloumi cubes alternately onto the skewers.
  3. Brush the skewers lightly with olive oil and season with black pepper.
  4. Grill the skewers for 2-3 minutes per side, until the halloumi is golden brown and slightly softened.
  5. Remove from grill, sprinkle with chopped fresh mint, and drizzle with balsamic glaze before serving.

Notes

This recipe is best served immediately while the halloumi is warm.
