Grilled Portobello Mushrooms

Ingredients
  

For the Mushrooms
  • 4 large portobello mushrooms stems removed, gills scraped
For the Marinade
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 clove garlic minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Equipment

  • Grill
  • Small bowl
  • Whisk
  • Basting brush

Method
 

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper to make the marinade.
  3. Clean the portobello mushrooms and remove the stems. Scrape out the dark gills with a spoon. Brush both sides of the mushrooms with the prepared marinade.
  4. Place the marinated mushrooms on the preheated grill, cap-side down first.
  5. Grill for about 7-10 minutes per side, or until tender and slightly browned. Baste with any remaining marinade during the last few minutes of cooking.
  6. Remove from grill and serve hot.

Notes

You can serve these grilled portobello mushrooms as a vegetarian main course or as a side dish. They are also great stuffed with cheese or other vegetables before grilling.
