Method
- Preheat your grill to medium-high heat.
- In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, oregano, salt, and pepper to make the marinade.
- Clean the portobello mushrooms and remove the stems. Scrape out the dark gills with a spoon. Brush both sides of the mushrooms with the prepared marinade.
- Place the marinated mushrooms on the preheated grill, cap-side down first.
- Grill for about 7-10 minutes per side, or until tender and slightly browned. Baste with any remaining marinade during the last few minutes of cooking.
- Remove from grill and serve hot.
Notes
You can serve these grilled portobello mushrooms as a vegetarian main course or as a side dish. They are also great stuffed with cheese or other vegetables before grilling.
