Method
- Preheat your grill to medium-high heat.
- Lightly brush the cut sides of the peaches with a little olive oil. Place the peaches cut-side down on the grill.
- Grill for 3-5 minutes per side, until grill marks appear and the peaches are slightly softened.
- Remove peaches from the grill and let them cool slightly. Once cool enough to handle, slice each half into wedges.
- While the peaches are cooling, prepare the dressing. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
- In a large bowl, combine the mixed greens, toasted pecans, and crumbled feta cheese.
- Add the grilled peach wedges to the salad. Drizzle with the honey dressing and toss gently to coat.
- Serve immediately.
Notes
You can substitute other nuts like walnuts or almonds for the pecans. Goat cheese can be used instead of feta for a creamier texture.
