Grilled Peach Salad with Honey Dressing

Ingredients
  

For the Salad
  • 4 medium peaches ripe but firm, halved and pitted
  • 5 oz mixed greens or your favorite salad greens
  • 1/4 cup pecans toasted
  • 1/4 cup feta cheese crumbled
For the Honey Dressing
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1/2 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Method
 

  1. Preheat your grill to medium-high heat.
  2. Lightly brush the cut sides of the peaches with a little olive oil. Place the peaches cut-side down on the grill.
  3. Grill for 3-5 minutes per side, until grill marks appear and the peaches are slightly softened.
  4. Remove peaches from the grill and let them cool slightly. Once cool enough to handle, slice each half into wedges.
  5. While the peaches are cooling, prepare the dressing. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
  6. In a large bowl, combine the mixed greens, toasted pecans, and crumbled feta cheese.
  7. Add the grilled peach wedges to the salad. Drizzle with the honey dressing and toss gently to coat.
  8. Serve immediately.

Notes

You can substitute other nuts like walnuts or almonds for the pecans. Goat cheese can be used instead of feta for a creamier texture.
