Ingredients
  

For the Chicken and Potatoes
  • 1.5 lbs chicken breast cut into 1-inch pieces
  • 1.5 lbs potatoes cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1 packet ranch seasoning mix
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/4 tsp salt

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the chicken pieces and potato cubes.
  3. Add the olive oil, ranch seasoning mix, garlic powder, black pepper, and salt to the bowl. Toss everything together until the chicken and potatoes are evenly coated.
  4. Spread the coated chicken and potatoes in a single layer on the prepared baking sheet.
  5. Bake for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender and golden brown. Flip the chicken and potatoes halfway through baking for even cooking.
  6. Serve hot and enjoy your easy one-pan meal.

Notes

You can add other vegetables like broccoli florets or bell pepper strips during the last 15 minutes of baking. For a creamier finish, you can drizzle with a little extra ranch dressing before serving.
