- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the chicken pieces and potato cubes.
- Add the olive oil, ranch seasoning mix, garlic powder, black pepper, and salt to the bowl. Toss everything together until the chicken and potatoes are evenly coated.
- Spread the coated chicken and potatoes in a single layer on the prepared baking sheet.
- Bake for 30-35 minutes, or until the chicken is cooked through and the potatoes are tender and golden brown. Flip the chicken and potatoes halfway through baking for even cooking.
- Serve hot and enjoy your easy one-pan meal.
Notes
You can add other vegetables like broccoli florets or bell pepper strips during the last 15 minutes of baking. For a creamier finish, you can drizzle with a little extra ranch dressing before serving.
