- Preheat your oven to 400 degrees F (200 degrees C). In a small bowl, combine the softened butter, minced garlic, and dried Italian herbs. Mix well and set aside.
- Season your steaks generously on both sides with salt, pepper, and garlic powder.
- Place an oven-safe skillet over medium-high heat. Add the olive oil. Once the oil is shimmering, sear the steaks for 2-3 minutes on each side until nicely browned. Transfer the seared steaks to a plate and set them aside.
- Add the diced baby potatoes to the same skillet. Season them generously with salt, pepper, and garlic powder. Sauté the potatoes for 3-5 minutes until they begin to brown. Push the potatoes to one side of the skillet and return the seared steaks to the other side.
- Transfer the skillet to the preheated oven. Cook for 15-20 minutes, or until the potatoes are fork-tender and the steak is cooked to your desired doneness.
- Immediately after removing the skillet from the oven, place a dollop of the prepared garlic butter onto each steak and distribute the remaining butter over the potatoes. Allow the butter to melt. Stir the potatoes to coat them in the melted butter, then sprinkle with fresh thyme and parsley before serving.

Notes
Any oven-safe skillet will work, but a cast-iron pan is recommended for achieving a great sear on the steak. Choose steaks that are small enough to fit comfortably in a 12-inch skillet alongside a generous amount of potatoes, typically about 4-6 inches long and 1 inch thick. Avoid very thin cuts, as they can overcook quickly.
