For the Sandwich
  • 4 slices sandwich bread sourdough with soft crust recommended
  • 4 tablespoon softened unsalted butter
  • 1 tablespoon mayonnaise
  • 3 cloves garlic very finely minced
  • 1 tablespoon finely chopped Italian parsley
  • Salt and pepper to taste
  • 1 cup freshly shredded cheese Gruyere, Colby Jack, and smoked Cheddar recommended

Method
 

  1. In a bowl, mix the softened butter, mayonnaise, garlic, and parsley until evenly combined. Season with a pinch of salt and pepper to taste.
  2. Spread the garlic butter mixture on one side of each slice of bread. Top two slices with shredded cheese and cover with the remaining two slices, buttered side up.
  3. Heat a nonstick skillet over medium-low heat. Cooking on medium-low heat allows the cheese to fully melt before the crust becomes too browned.
  4. Once the skillet is warm, cook the sandwiches for about 5 minutes per side, until golden brown and the cheese is melted. You may need to flip them a few times and gently press them down to ensure the cheese melts evenly.
  5. Slice and serve immediately. Enjoy while warm and melty.

Notes

For best results, freshly grate your cheese as it will melt much better. You can also use pre-packaged cheese slices that melt well, such as American or Colby Jack.
