- Preheat your oven to 375 degrees F (190 degrees C).
- Arrange the tortilla wedges in a single layer on a baking sheet.
- Brush the tortilla wedges with melted butter.
- In a small bowl, combine the sugar and cinnamon. Sprinkle this mixture evenly over the tortilla wedges.
- Bake for 8 to 10 minutes, or until the chips are golden brown and crisp.
- While the chips are baking, prepare the salsa. In a medium bowl, combine the diced peaches, chopped red onion, chopped cilantro, minced jalapeno, lime juice, and salt.
- Stir gently to combine all ingredients.
- Cover the salsa and refrigerate for at least 15 minutes to allow the flavors to meld.
- Serve the chilled peach salsa with the cinnamon chips.
Notes
You can adjust the amount of jalapeno to control the spice level. If you don't have fresh peaches, you can use frozen peaches that have been thawed and drained.
