Freezer Sausage Breakfast Burritos

Ingredients
  

For the Burritos
  • 1 pound Pork sausage casings removed
  • 1 medium Onion chopped
  • 1 medium Bell pepper chopped
  • 6 Large eggs
  • 1/4 cup Milk
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 2 cups Shredded cheddar cheese
  • 12 Large flour tortillas

  • Baking sheet
  • Large bowl

Method
 

  1. In a large skillet, cook the sausage over medium-high heat until browned. Drain off any excess grease.
  2. Add the chopped onion and bell pepper to the skillet with the sausage. Cook until softened, about 5-7 minutes.
  3. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  4. Pour the egg mixture into the skillet with the sausage and vegetables. Cook, stirring occasionally, until the eggs are set.
  5. Stir in the shredded cheddar cheese until melted.
  6. Warm the tortillas slightly to make them pliable. You can do this in a dry skillet, microwave, or oven.
  7. Spoon about 1/2 cup of the sausage and egg mixture onto the center of each tortilla.
  8. Fold in the sides of the tortilla, then roll up tightly from the bottom to create a burrito.
  9. Place the burritos seam-side down on a baking sheet. You can optionally toast them in a preheated oven at 375°F (190°C) for a few minutes until lightly golden.
  10. Let the burritos cool completely. Wrap each burrito individually in plastic wrap or foil, then place them in a freezer-safe bag or container.

Notes

To reheat, remove the wrapping and microwave on high for 1-2 minutes, or bake in a preheated oven at 350°F (175°C) for about 20-25 minutes, or until heated through. You can also toast them in a skillet or toaster oven.
