- Cook pasta according to package directions. Drain, reserving about 1 cup of pasta water.
- While pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
- Add the chopped artichoke hearts and cook for 2-3 minutes.
- Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese and red pepper flakes (if using). Season with salt and black pepper.
- Add the drained pasta to the skillet with the sauce. Toss to combine. If the sauce is too thick, add a little reserved pasta water until it reaches your desired consistency.
- Serve immediately.
Notes
You can add cooked chicken or shrimp for a more substantial meal.
