- In a large bowl, toss beef with ginger, 2 garlic cloves, pepper, and 1/2 teaspoon salt. Let stand for 15 minutes.
- Meanwhile, in a small bowl, whisk together coconut milk, sugar, chili sauce, lime zest, lime juice, and the remaining 1/4 teaspoon salt until blended.
- In a large skillet, heat 1 tablespoon of canola oil over medium-high heat. Add the beef and stir-fry until no longer pink, about 2-3 minutes. Remove the beef from the pan.
- Add the remaining 1 tablespoon of canola oil to the skillet. Stir-fry the red pepper, red onion, jalapeno, and the remaining minced garlic until the vegetables are crisp-tender, about 2-3 minutes.
- Stir in the coconut milk mixture and heat through. Add the spinach and beef. Cook until the spinach is wilted and the beef is heated through, stirring occasionally.
- Sprinkle with green onions and cilantro before serving.

Notes
This recipe is a great starting point for beginner cooks. Feel free to adjust the spice level by adding more or less Sriracha and jalapeno. You can also substitute other vegetables you have on hand.
