Easy BBQ Chicken Bowls

Ingredients
  

For the Chicken
  • 1 lb boneless, skinless chicken breasts cut into 1-inch pieces
  • 1/2 cup BBQ sauce plus more for serving
For the Bowls
  • 2 cups cooked rice or quinoa
  • 1 can black beans rinsed and drained
  • 1 cup corn frozen or canned
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro optional

Equipment

  • Baking sheet
  • Small saucepan

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, toss the chicken pieces with 1/2 cup of BBQ sauce until coated.
  3. Spread the coated chicken in a single layer on the prepared baking sheet.
  4. Bake for 15-20 minutes, or until the chicken is cooked through and slightly caramelized.
  5. While the chicken bakes, warm the rice, black beans, and corn in a saucepan or microwave.
  6. Assemble the bowls by dividing the rice, beans, and corn among four bowls. Top with the baked BBQ chicken.
  7. Garnish with shredded cheddar cheese and fresh cilantro, if desired. Serve with extra BBQ sauce on the side.

Notes

You can use rotisserie chicken for an even quicker meal. Adjust the amount of BBQ sauce to your preference.
