Easy Baked Churro Bites

These easy baked churro bites are a simple and delicious treat. They are crispy on the outside, soft on the inside, and coated in cinnamon sugar.

Ingredients
  

For the Churros
  • 230 ml cold water
  • 120 g unsalted butter
  • 0.5 tsp salt
  • 1 tsp vanilla extract
  • 2 tbsp soft brown sugar
  • 160 g plain flour
  • 3 medium eggs
  • 240 ml boiling water for steam
For Coating and Dip
  • 200 g white caster sugar
  • 2 tsp ground cinnamon
  • 3 tbsp melted butter
  • 200 g white chocolate broken into pieces
  • 5 heaped tbsp dessicated coconut

Method
 

  1. Preheat your oven to 200C/400F (fan). Line two baking sheets with parchment paper or silicon mats.
  2. In a saucepan, combine the cold water, butter, salt, vanilla extract, and brown sugar. Bring to a boil and simmer for 1-2 minutes until the sugar dissolves.
  3. Reduce the heat to low. Stir in the flour with a wooden spoon until the mixture pulls away from the sides of the pan. Turn off the heat.
  4. Stir in the eggs one at a time with the wooden spoon until combined. Avoid over-stirring.
  5. Transfer the mixture to a piping bag fitted with a large star tip.
  6. Pipe rows about 8-10cm long onto the prepared baking sheets, leaving 2-3cm between each churro.
  7. Pour 1 cup of boiling water into a separate baking tray and place it on the bottom rack of your oven. This steam will help keep the churros soft inside while they crisp up.
  8. Place the trays of churros in the oven and bake for 20-25 minutes, or until golden brown.
  9. While the churros bake, melt the white chocolate. You can do this over a double boiler or in the microwave in 30-second intervals, stirring between each burst to prevent burning. Spoon the melted chocolate into a small serving bowl. Place the desiccated coconut in another small serving bowl.
  10. On a large plate, mix together the caster sugar and cinnamon.
  11. Remove the churros from the oven. Brush them with the melted butter, then roll them in the cinnamon sugar mixture.
  12. Serve the churro bites with the melted white chocolate and coconut for dipping.

Notes

You can adjust the cinnamon sugar to your preference. For a richer chocolate flavor, you can add a touch of vanilla extract to the melted chocolate.
