Creamy Tuscan Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts chicken breasts cut in half horizontally
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
For the Sauce
  • 1 tablespoon butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes chopped
  • 2 cups fresh spinach
  • 1/4 teaspoon red pepper flakes optional

Method
 

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. Add butter to the skillet. Once melted, add minced garlic and cook for 1 minute until fragrant.
  4. Pour in heavy cream and chicken broth. Bring to a simmer, then stir in Parmesan cheese, sun-dried tomatoes, and red pepper flakes (if using).
  5. Add spinach to the sauce and stir until wilted.
  6. Return the chicken to the skillet and spoon the sauce over it. Simmer for 2-3 minutes to heat through.

Notes

Serve immediately over pasta, rice, or with crusty bread.
