Method
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- Add butter to the skillet. Once melted, add minced garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and chicken broth. Bring to a simmer, then stir in Parmesan cheese, sun-dried tomatoes, and red pepper flakes (if using).
- Add spinach to the sauce and stir until wilted.
- Return the chicken to the skillet and spoon the sauce over it. Simmer for 2-3 minutes to heat through.

Serve immediately over pasta, rice, or with crusty bread.
