- Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
- Stir in the taco seasoning and water. Bring to a simmer.
- Add the diced tomatoes and uncooked pasta to the skillet. Stir to combine.
- Cover the skillet and reduce heat to medium-low. Cook for 15-20 minutes, or until the pasta is tender, stirring occasionally.
- Remove from heat and stir in the shredded cheese until melted and combined.
- Serve hot.
Notes
You can add toppings like sour cream, salsa, or chopped cilantro if desired.
