Ingredients
  

For the Cabbage
  • 1 medium head cabbage about 2 pounds, shredded
  • 2 cups water for cooking cabbage
For the Mashed Potatoes
  • 4 pounds potatoes about 8 medium, peeled and quartered
  • 2 cups whole milk
  • 1 cup green onions chopped
  • 1-1/2 teaspoons salt
  • 1/2 teaspoon pepper
For Serving
  • 1/4 cup butter melted
  • parsley minced fresh
  • bacon crumbled cooked

Method
 

  1. Place cabbage and 2 cups water in a large saucepan. Bring to a boil, then reduce heat. Simmer, covered, until cabbage is tender, about 10 minutes. Drain, reserving the cooking liquid. Keep the cabbage warm in a separate dish.
  2. In the same pan, combine potatoes and the reserved cooking liquid. Add additional water to cover the potatoes. Bring to a boil, then reduce heat. Cook, uncovered, until potatoes are tender, 15-20 minutes.
  3. Meanwhile, place milk, green onions, salt, and pepper in a small saucepan. Bring just to a boil and remove from heat.
  4. Drain the potatoes and place them in a large bowl. Mash the potatoes. Add the milk mixture and beat just until blended. Stir in the cooked cabbage.
  5. To serve, drizzle with melted butter and top with fresh parsley and crumbled bacon.
