Bruschetta Chicken

Ingredients
  

For the Chicken
  • 4 boneless, skinless chicken breasts about 6 oz each
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Bruschetta Topping
  • 2 cups chopped fresh tomatoes about 2 medium
  • 1/4 cup chopped red onion
  • 2 cloves garlic minced
  • 2 tablespoons fresh basil chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Place chicken breasts in a baking dish. Drizzle with 2 tablespoons of olive oil, then season with salt and pepper.
  3. Bake for 20 minutes, or until the chicken is cooked through.
  4. While the chicken bakes, prepare the bruschetta topping. In a medium bowl, combine chopped tomatoes, red onion, minced garlic, chopped basil, balsamic vinegar, 1 tablespoon of olive oil, salt, and pepper. Stir to combine.
  5. Once the chicken is cooked, remove it from the oven. Spoon the bruschetta topping over each chicken breast.
  6. Serve immediately.

Notes

You can add a sprinkle of Parmesan cheese over the topping before serving if desired.
