Ingredients
  

For the French Toast Bake
  • 8 slices bread stale or lightly toasted, cut into 1-inch cubes
  • 1.5 cups mixed berries fresh or frozen
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

  • powdered sugar for dusting
  • maple syrup

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. Spread the cubed bread evenly in the prepared baking dish. Sprinkle the mixed berries over the bread.
  3. In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, cinnamon, and salt until well combined.
  4. Pour the egg mixture evenly over the bread and berries in the baking dish, ensuring all the bread is moistened.
  5. Let the mixture sit for about 5-10 minutes to allow the bread to soak up the liquid.
  6. Bake for 40-45 minutes, or until the French toast bake is golden brown and set in the center.
  7. Let it cool slightly before serving. Dust with powdered sugar and serve with maple syrup, if desired.

Notes

You can use any type of bread you like, but slightly stale bread works best as it absorbs the custard without becoming too mushy. If using frozen berries, do not thaw them before adding to the bake.
