Baked Salsa Chicken

Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts about 6 oz each
  • 1 jar salsa 16 oz, your favorite kind
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • 1/8 tsp black pepper
Optional Toppings
  • 1/2 cup shredded cheese cheddar or Monterey Jack
  • 2 tbsp chopped cilantro

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Place the chicken breasts in the prepared baking dish.
  3. In a small bowl, mix together the salsa, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  4. Pour the salsa mixture evenly over the chicken breasts, ensuring they are well coated.
  5. Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  6. If using, sprinkle the shredded cheese over the chicken during the last 5 minutes of baking. Garnish with cilantro before serving.

Notes

Serve this baked salsa chicken with rice, quinoa, or a side salad. It's also great shredded and used in tacos or enchiladas.
