Ingredients

For the Peppers
  • 4 Bell peppers any color, tops cut off, seeds removed
For the Filling
  • 1 pound Ground beef
  • 1 small Onion finely chopped
  • 2 cloves Garlic minced
  • 1 cup Cooked rice
  • 1/2 cup Tomato sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
  • 1/2 cup Shredded cheese cheddar or mozzarella

Equipment

  • Air fryer
  • Large bowl
  • Skillet

Method

  1. Preheat your air fryer to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with the chopped onion until the beef is no longer pink and the onion is softened. Drain off any excess grease.
  3. Stir in the minced garlic, cooked rice, tomato sauce, Italian seasoning, salt, and pepper. Cook for another 2-3 minutes until heated through.
  4. Stuff the mixture evenly into the prepared bell pepper halves.
  5. Place the stuffed peppers in the air fryer basket. Cook for 15-20 minutes, or until the peppers are tender and the filling is heated through.
  6. In the last 5 minutes of cooking, sprinkle the shredded cheese over the top of the stuffed peppers and allow it to melt.
  7. Carefully remove the stuffed peppers from the air fryer and serve immediately.

Notes

You can substitute ground turkey or chicken for the ground beef. Add a pinch of red pepper flakes to the filling for a little heat.
